Day 5 of the 7 Day Challenge

As our week of super healthy eating starts to draw to a close, we had another busy day today. We spent plenty of time outside walking about to try and make the most of the late winter sunshine!

Before we headed outside though, James had some work to do and we scoffed some more granola just beforehand - just after remembering to take a nice photo!


With the work calls completed, we ran some errands - the biggest excitement of today being collecting some more food waste bags from someone's front garden on our walk. BTW, that's completely legit; apparently that's how we do it round our way! Who needs official pick up points anyways, this way is much easier!


With some of the daily excitement completed and with us safely back at home, we had something new for lunch today. Today we made ourselves Chipotle Lime Bean Bowl. It's a super fresh salad bowl with your staples: lettuce, tomato, avocado and onion, but combined with cooked sweet potato, kidney beans and a homemade chipotle dressing. All super easy to make and, genuinely, unbelievably tasty. So much so that we both went back for a bit more of the dressing and were suitably stuffed after the amount we ate! It also photographs really well, so if you're into Instagramming food, then definitely add this to your list.


After that hearty lunch, we didn't need any afternoon snacks to see us through to dinner. Today's evening meal was a curry! If you're a regular reader, you'll know we absolutely love our curries and a lot of the recipes which we list on our site are Indian or Bangladeshi inspired. Today's option was a little bit milder than what we'd normally make and was a cauliflower and chickpea masala. It was quite a nice turn of pace and had a strong, mild, tomato-y flavour almost like a concentrated Vegetable Rogan. Obviously, it was rude to have it without our trademark naan breads which probably slightly bent the rules (we did use normal flour instead of spelt or another healthier alternative), but we won't tell if you don't! Definitely one to make again - it's really quick and easy and not too involved.
