You might have noticed by now that Amy is a great lover of the tomato-based pasta. She believes that you can never go wrong with a basic tomato sauce and has been looking for the perfect recipe for those days when you just fancy something quick, simple but still full of flavour. She loves this sauce plain with pasta or as part of a delicious lasagne!
Ingredients
1 tbsp extra virgin olive oil,
1 small brown onion, finely chopped,
2 garlic cloves, chopped,
1 small carrot, finely chopped,
2 medium beef or on-the-vine tomato, chopped,
2 tbsp tomato puree,
1 tin of chopped tomatoes (peeled plum can also be used)
Handful fresh basil leaves
Method
Heat the oil for thirty seconds and add in the finely chopped brown onion and carrot. After two minutes, add in the garlic and sautee until the vegetables are tender.
At this point, add in the tomato puree and mix in thoroughly.
Add in the beef/ on the vine tomatos and the chopped tomatoes, along with the torn up fresh basil.
Season to your taste. Bring to the boil and then simmer for twenty minutes.
At this point we use a hand blender because we like our sauce thicker, but this step is optional.
Taste and decide whether it needs more seasoning or any sugar if not sweet enough.
You could use this with freshly cooked pasta or as part of a lasagne. Enjoy piping hot! It makes great leftovers too!
